Chicken With Snow Pea Sprouts Recipe


!±8± Chicken With Snow Pea Sprouts Recipe

Preparation time: 15 minutes
Total cooking time: 15 minutes
Serves 4

Ingredients:

2 tablespoons oil
1 onion, finely sliced
3 kaffir lime leaves, shredded
3 chicken breast fillets, cubed
1 red capsicum, sliced
1/4 cup (60ml/2 fl oz.) lime juice
100ml (3 1/2 fl oz.) soy sauce
100 g (3 1/2 oz.) snow pea sprouts
2 tablespoons chopped
coriander leaves

Directions:

1.Heat a wok over kind of medium heat, add some oil and swirl it all around to coat the base and side of the wok. Then add the onion and the kaffir lime leaves and stir-fry them for about 3-5 minutes or so, or until the onion begins to soften. After that, add the chicken and cook it for a further 4 minutes or so. That add the capsicum and continue to cook for about 2-3 minutes or so.

2. Stir in the lime juice and the soy sauce and cook them for about 1-2 minutes or so, or until the sauce reduces slightly. Then add the sprouts and the coriander and cook them until the sprouts have slightly wilted. Serve it immediately.

Hints:

It's almost common knowledge that Kaffir lime leaves are quite tough leaves with a wonderful aroma and flavour. Because of their toughness, however, it is kind of necessary to shred them as finely as you can. Fold the leaves in half down their spines and after that shred finely with a sharp knife.

Variation:

You can use asparagus instead of capsicum, and some mint or some basil instead of coriander.
